Learn how to make fresh Italian pasta with your own hands at a family home in Calestano, a small medieval village nestled amongst the hills of Parma. Over the course of around 3 hours, you’ll discover traditional techniques for making pasta from scratch and finish by sitting down to a meal to sample what you’ve cooked.
The experience includes making specialities such as tagliatelle and ravioli, prepared with seasonal ingredients and local produce. Before the meal, you’ll also enjoy an aperitif featuring typical Parma cured meats and various ages of Parmigiano Reggiano, followed by the freshly made pasta and a homemade tiramisu.
You can choose from three options: the fresh pasta experience with local wines, an option featuring black truffle, or a premium option combining truffle pasta with a selection of top-quality wines.

Step by Step
The experience takes place in Calestano, amongst the hills of Parma, far removed from the atmosphere of a conventional cookery school. You’ll step into a family home and get straight down to work to discover some of the secrets of Emilian cuisine.
During the class, you’ll learn how to work with fresh egg pasta dough until it achieves a fine, elastic texture. Then it’ll be time to shape it and prepare specialities such as tagliatelle and ravioli, using seasonal ingredients and produce sourced, where possible, from the family’s own vegetable garden.
Once the pasta is ready, the class turns into an Italian meal around the table. You’ll start with an aperitif featuring local produce, which may include traditional Parma cured meats and various ages of Parmigiano Reggiano, before tasting the pasta you’ve just made, served with a homemade sauce.
Depending on the option you choose, you can incorporate black truffles from the Parma hills and pair the dishes with local wines or, with the premium option, a selection of top-quality wines. It’s a way of turning the class into a more complete gastronomic experience, sampling ingredients closely linked to the local area.
To finish off, you’ll enjoy a homemade tiramisu, along with coffee or tea. In around 3 hours, you’ll have gone from kneading and cutting your own pasta to sitting down at the table and tasting the results in a relaxed, family-friendly atmosphere.
