Embark on an express Pinot Noir masterclass in the heart of Dijon's historic centre and understand, glass in hand, why the queen of Burgundy's grapes has been seducing palates for centuries. The workshop takes place at the boutique cellar Les Clos Vivants (1 Bis Rue Musette, 3 minutes from the Place de la Libération) and lasts 45 minutes: just the right amount of time for a sensory journey through mythical climates without leaving the city.

Guided by a bilingual (French/English) maître d'caviste, you will taste four Pinot Noirs that illustrate the progression from villages to premier cru, while discovering the keys of soil, orientation and vintage that determine the character of each glass.

Step by Step

Under the stone vault of Les Clos Vivants, the air is kept at 12°C and smells of toasted barrels: a perfect setting for the expert guide to unfold maps of the climates and explain how a few metres of terroir change the typicity of the wine. In the first glass, a light and fruity Pinot Noir Villages shines; in the second, a Côte de Nuits with a spicy note.

The third, a silky Premier Cru, opens the debate on oak ageing and ageing potential. The finishing touch is provided by an old cuvée with a deep ruby colour that demonstrates the varietal's ageing capacity: notes of undergrowth, truffle and a persistent finish. The wine is accompanied by country bread and local cheese to highlight the nuances without tiring the palate.

Between sips, the sommelier demonstrates oxygenation techniques, temperature tips and how to improvise a home wine cellar at home. Questions flow naturally thanks to the small format; if you're travelling with little luggage, they explain shipping options to your country.

At the end, you walk up the stairs with a dossier of personalised tasting notes, ready to explore the wine cellars of the Route des Grands Crus with much more refined criteria. A concentrated, didactic and delicious experience for wine lovers on a tight schedule.
